Have you ever just had a hankering for something and you just aren’t happy until you get it? Of course you have! We’ve all experienced that. Right now I’m in a lemon mood. I don’t know if it’s because it’s spring and spring to me, equates to lemons. Is it because winter seems to be the time of heavy spices like ginger, molasses, cinnamon?
I’m a spring and summer girl. I don’t handle winter well at all! BLECH! I’m afraid to drive in the snow and ice (but I do it and I do it well too!) I’m afraid to walk on the ice (WHY must my parking lot be so far from my job!?!) Hey I’m not about to waste my time and energy on ANYTHING winter so I’m gonna shut this down right now. What was I talking about…lemons, right! Ok, so even though I’ve been in a lemon kinda mood and I’ve bought a few lemons to get started on something, I havent made ANY thing yet. I’ve tossed away two lemons so far because they sat for too long. I hate to toss away things that could end up in a baked good. I’ve baked with bananas that were so dark you would think they were chocolate dipped LOL!
I am in a lemon curd state of mind but what will the curd go into? I’ve envisioned a lemon cake with lemon curd. Lemon cupcakes with lemon curd filling. Shortbread cookies with lemon curd filling. Even an old-fashioned coconut cake with lemon curd…how about a bowl and spoon of lemon curd? I LOVE freshly made lemon curd! SO WHAT IS MY PROBLEM??
Then on the other hand I’ve been thinking blueberry. To go from my springy, citrusy lemon to blueberry…I confuse myself. So I finally said to myself, “Self…why not make some thumbprint cookies with a nice blueberry jam filling?” You know what I said in response (Stop laughing, it’s not like YOU’VE never talked to yourself! Dont judge me!) I said “OK!” And that is what I made.
Now the jam that I used is made by a local company located in Bexley, Ohio. The first time I tasted their jam I was hooked! So hooked that…oh I never thought I’d confess this to anyone but…I stalked them. Yes. I first discovered them at the Pearl Alley Farmers Market a few years ago. Well last year they weren’t there! YAAAAAH!! YIKES!!! GAAAAAHHH!! HUHHHH!?!? Did they close shop? Why aren’t they at the market??? Where are they?? SO I did a search on line and found their website, they were no longer attending the Pearl Alley market but another one instead. Welllllll I’ll just have to go to the new spot and I DID! And I bought, well…I bought…I bought more than one jar…OK…more than two but that’s all I’m confessing! The stuff is GOOD, GREAT, AWESOME! I love the variety of flavors, so unique, so good!
